Pierre Vaudon, cellar master and owner of Maison François Voyer, wanted to explore with this cognac what a different choice of wood could mean for the maturation of eaux-de-vie. For this, for the 2nd phase of maturation, oak from the Swiss forest of Bussigny was chosen. This wood was first given three years of natural drying on slats, starting in July 2018. This calm preparation provided stability in the wood and a controlled aromatic influence during further maturation. It was then processed by cooper Jean-Noël Pelletant, known for his precise and refined working method. This 10-year-old cognac was placed in a Swiss oak cask in May 2023 for a second maturation phase. This double cask maturation provides extra complexity, more structure, and a beautiful aromatic depth.
about the producer:
François Voyer's 28 hectares of vineyards are located in the Grande Champagne region, the Premier Cru of Cognac, known for producing eaux-de-vie with aromatic power and qualities suitable for long-term aging. François Voyer Cognac is a family-run Cognac house that is passionate about every detail of production. The François Voyer cognac house was handed down to its cellar master - Pierre Vaudon - to perpetuate its identity. Their cognacs are served in some of the most renowned restaurants and won awards in prestigious international competitions. The vineyards are located in Verrières and Ambleville and have been producing cognac since 1870. Their range is classic, with a range of younger expressions, as well as exceptionally old assemblages and vintage bottles. The house of Voyer cherishes traditional knowledge and has tremendous attention to detail. Definitely one of our favorite cognac houses as they brilliantly manage to set the bar very high throughout the entire range and bottle absolute uncompromising and very recognizable quality.
